Vegan Chocolate Mousse

If there is no other recipe that you try, try this one! It looks like chocolate mousse but I argue that it is better than any chocolate mousse I have ever tried.

1/4 cup pitted dates (soak these for about an hour to soften)
1/4 cup agave (softer cookies) or maple syrup (crispy cookie!)
1/2 t vanilla extract
1.5 avocado
1/4 cup + 2 T unsweetened organic cocoa powder
1/4 cup water

Chop the dates, agave/maples syrup, and vanilla in food processor. Add in avocados and coca and blend until smooth. Add water and blend briefly. Scrape the side of the processor as needed. Chill and serve.

I made this recipe this weekend and it didn't end up so good because the avocados that I bought were too hard and it wouldn't blend with all of the other things. BUT it still tasted REALLY good!

So far, this is my favorite recipe!

  1. I have another Squash recipe from a man who used the sports squash. He says squash is one of the few sports in which you can actually improve by playing alone: banging countless rails up and down the side wall you can get in 45 minutes one of the best workouts you can get. Squash is a game of integrity, played by honorable men and women.

    Squash stir fry:
    2 tbls olive oil
    1 tbl minced ginge
    1 tbl minced garlic
1 large kabocha squash, peeled, cut into 8 wedges, then thinly sliced
    1 cup chicken stock
    1 tbl soy sauce
Zest and juice of 1 lemon, salt and pepper

In a wok or pan on med. Heat add olive oil, ginger and garlic and heat for 30 seconds. Add squash and sauté for 2. minutes, add stock and heat for 2 minutes, add soy sauce lemon and pepper.
